Sugar Time is really finished by now but it is still time to taste this unique North American product that is a southern Quebec specialty. I'm talking about the wonderful maple syrup. Ranked among the world's best sugar, and this, both in taste as nutritious, maple syrup can be processed into flakes, powder, butter, taffy, etc.., etc.. David Theroux designed a series of tastings of maple syrup and its derivatives in my packaging class last year. Packaged in test tubes the series is embedded in a block of maple wood ready to enjoy.
